Inconsistent MySQL backup duration

0

Im having a problem with my database. The issue is my backup time using mysqldump is inconsistent. On average, the duration is only for 1hour 30minutes but sometimes it goes to 4, 6, and even 10 Hours to complete. But some other time it takes less than 1 Hour.
During the backup, there are no background process running. And the backup start every midnight 12.05AM. Plus, i also run mysqlcheck once a week for all the databases. Futhermore, Usually when the backup time increase, so do the processlist during operation time.

Total database: 159

Total size: 123GB

Server Specs : 16Core CPU, 128GB RAM

Command to run backup (cron):

Configuration (my.cnf) :

**Sorry for the small image

Can anyone highlight the best solution to achieve consistent backup duration?
